MEET

MICHAEL VALE

My name is Michael Vale and I am a veteran Sydney hospitality operator and conceptual developer, consultant and project manager. 


I have been on the Sydney hospitality scene for just under 40 years. I have been the driving force behind the conceptual creation and launch of over 45 Sydney hospitality projects, from being one of the pioneers of the Wood Fire Pizza industry, to bringing a global music brand and bar concept to Australia, to launching an Australian chocolate bar concept in Orlando Florida, to hanging a 22-seat restaurant off a building crane high in the sky above Sydney harbour in front of the Opera house. (They simply don't get any crazier than that.)


I have launched over 15 Café and Bar operations, the re-invention of three Sydney pubs, a host of fast food operations, the launch of Sydney’s first ‘Meatball’ operation, and the creation of two Australian craft beer bars. 


My Café Del Mar operation at Cockle Bay was voted by Qantas insider magazine, as one of the ‘Top-Ten’ rooftop bars in the world.


Regardless if it’s a 50 seat Café or a 650 seat theatre restaurant, I come to any new F&B project with a world of knowledge and experience, always underpinned by the concept of creating something truly ‘Ground Breaking’ with a clear and distinct commercial point of differentiation for the Sydney market.
